Why does Remy have an American accent?
Because the film illustrates a clear language barrier. In scenes where Remy communicates to Linguini, he is using sign language. Although Remy is extremely talented when it comes to cooking and culinary skills, they both can't understand each other as they are different species and communicate differently.
Because Linguine is an Italian pasta and everyone knows all Italians speak with an American accent.
